Make-Your-Own Fruit Leather

Ingredients

  • 2 cups dried fruit, such as cherries or apricots

  • 2 cups hot water

  • 4 tablespoons honey

  • 3 tablespoons black flax seeds or sesame seeds (optional)

Directions

Pre-heat the oven to 200˚F with the rack in the center. Place the fruit in a bowl and cover with the water. Microwave for 5 minutes to plump and soften. Drain and reserve the liquid. Place the fruit in a food processor. Add the honey and process until the mixture is very smooth and easily spreadable. If it is too thick, add some of the reserved cooking liquid. Cover two 10-inch x 15-inch baking sheets with plastic wrap. Divide the puree between the sheets and spread in a thin, even layer with an offset spatula. Then sprinkle with the seeds, if desired. Let dry in oven until the mixture is firm but slightly tacky, about 5 hours. Peel the fruit leather from the plastic wrap and cut into 1-inch-wide strips using a pizza cutter. Roll tightly into cylinders and serve.
