Frozen Gin and Tonic Cocktail Recipe

  • Servings: 4-6

We love the Frozen Gin and Tonics that our friends at Loro in Austin TX make and had to try to recreate them at home. We nailed the slushy consistency by freezing tonic water in an ice cube tray and blending them with more ice, gin, lime juice and a bit of sweetener. This slushy drink is like the best Italian ice you've ever had!

Recipe by John Cusimano and featured on Rachael Ray's Meals in Minutes.

Ingredients

  • 16 ounces of tonic water
    20 ice cubes
  • 8 ounces of gin
  • 4 ounces of fresh squeezed lime juice
  • 4 ounces of simple syrup

Directions

Fill an ice cube tray with tonic water and let it freeze overnight.

In a blender, add in regular ice cubes, gin, lime juice, simple syrup, and tonic water ice cubes. Blend on high until ice is fully crushed and pour into glasses. We like to drink these with straws that have spoons attached at the ends so you can drink or scoop the slushy.

*For the simple syrup, combine 1 cup sugar and 1 cup water in a small saucepan and bring to a boil over medium heat. Simmer until the sugar is dissolved, then let cool to room temperature. Syrup will keep, tightly covered, in the refrigerator for up to 1 month. Makes about 1 ½ cups
