Ingredients
1 box/bag falafel mix (10 ounces, or around 1 3/4 cups)
1 3/4 cups water
1/2 cup chick peas, chopped
1/2 cup parsley, chopped
1 tablespoon canola oil, plus more for brushing waffle iron
Salt and pepper
For the tahini sauce:
1/4 cup tahini
1 garlic clove, pasted
Juice of 1 lemon
A few tablespoons of warm water
Salt and pepper
Optional toppings:
Chopped tomatoes
Shredded Romaine
Chopped pepperoncini
Red onion, sliced
Parsley
Directions
Set the waffle iron to medium-high. In a medium size bowl, mix together the falafel mix, water, chick peas, oil and parsley. Season with salt and pepper and let stand for 15 minutes. Evenly pour the falafel mix over the waffle maker. Close the waffle maker and cook for 5 minutes. In a medium size bowl, mix together the tahini, garlic and lemon. Pour in a few dashes of water until the mixture loosens a bit. Season with salt and pepper. Remove the waffles from the waffle iron and serve with tahini sauce and as many toppings as you’d like.
